Ingredients:2 small baguettes4 large eggs3 tablespoons buttermilk2 ounces cooked spicy sausage2 ounces shredded sharp cheddar cheese1/3 chopped fresh spinachSalt and pepper to tasteDirections:
    Preheat oven to 350 degrees F.Cut off the top of the baguette and hollow out the inside.In a medium bowl, whisk together the egg and buttermilk. Stir in sausage, cheese, chopped spinach, salt and pepper.Divide filling into two equal parts and fill the baguettes.Cook baguettes on a parchment-lined baking sheet and bake until the eggs are set, about 30-40 minutes.

Thai chicken lettuce wraps with honey-peanut sauce

Thai chicken lettuce wraps with honey-peanut drizzle recipe

Serves 4

Ingredients:

For the lettuce wraps:

2 cups cooked chicken, diced1 tablespoon canola oil1/2 cup chopped yellow onion2 cloves garlic, minced4 green onions, chopped, divided use1/3 cup julienned carrots1 (5 ounce) can sliced water chestnuts1/2 cup chopped peanuts, divided1/4 cup chopped cilantro, divided1 teaspoon Sriracha sauce1 teaspoon soy sauce1/2 cup shredded cabbageSaltPepper8-12 lettuce leaves

For the sauce:

1 tablespoon creamy peanut butter1 tablespoon honey1-1/2 teaspoons soy sauce1/2 teaspoon sesame oil1/2 teaspoon freshly grated ginger1/2 teaspoon Sriracha sauce1/4 teaspoon sesame seedsDirections:
    Whisk all sauce ingredients together. Cover and refrigerate until ready to serve.Heat oil over medium heat in a large nonstick skillet. Saute onion, garlic, half the green onions and carrots until soft, 7-8 minutes. Season with salt and pepper.To the pan, add chicken, water chestnuts, remaining green onions, half the peanuts, half the cilantro, Sriracha and soy sauce. Season with salt and pepper. Stir well. Allow the mixture to cook for 1-2 minutes more.Serve the mixture with lettuce leaves and garnish with cabbage, remaining peanuts and cilantro, and honey-peanut sauce.

Fitting in exercise on the road

On The GoWhile taking summer beach vacations, traveling for work and visiting Aunt Matilda for the holidays, getting in a good workout can seem next to impossible with not a gym in site. This doesn’t mean that your exercise routine has to go by the wayside. Scott Keppel, certified fitness instructor and president/CEO of Scott’s Training Systems in Arizona, recommends this 30-minute total body workout to maintain fitness but still have time to enjoy yourself while away from home.

The beauty of this routine is that it requires no special equipment -- just a good pair of training shoes. To make the most of your workout away from home, Scott says, "Clear out an area with enough space, and eliminate distractions by turning off your cell phone and the television."

Start with a 10-minute warmup: Do jumping jacks, go for a jog, or walk up and down a staircase.

Squat jumps:

While standing with feet hip-width apart, bend knees while pushing buttocks back, keeping your knees in line with your feet. On the way back to standing, jump into the air quickly. Upon landing, go right back into the squat position. Continue and repeat.

Pelvic raises:

While squeezing your glutes, lie on your back on the floor with feet flat on low bed, chair or floor, and knees bent. Raise your hips until they are in line with your thighs and torso. Return back to starting position and repeat.


Chair dips:

Sit on a chair with palms grasping the edge of the seat. Walk your legs out until your knees are above your feet. Dip down by bending your elbows until the arms are at a 90-degree angle. Push back up and repeat.

Bent-over rear delts:

Standing and holding a full water bottle in each hand, bend from the waist until your torso is at a 60- to 90-degree angle. Start with your arms hanging, and then raise both arms straight out. (Use at least a 20-ounce water bottle. The larger the size, the harder the workout.)


Pilates abs: 

Lie on the floor on your back with legs extended and hands pointed up toward the ceiling, above chest. Sit up all the way without moving legs and reach into a toe touch.

For each exercise, do timed repetitions of 20 seconds and then 10 seconds resting. Do three to five sets of this for each exercise in a row. Perform this regimen three times per week while away from home, and add in two days of a 30- to 45-minute cardiovascular exercise, such as walking or running.

How to stock your pantry for the end of the world

Food Items You Need... Just In Case As we ring in 2012, we can't forget that the world is supposed to end! While we don't really believe that, this whole the-world-is-ending thing got us thinking: What do we need in our pantries to be prepared?

Dec. 21, 2012 -- the day the world is supposed to end. We may be jumping the gun a little, but you can never be too prepared, right? Also, we realize that the end of the world means these things probably won't be necessary, but we live by the Boy Scout motto. If you want to have a properly stocked pantry for this life-altering (literally) event, keep reading.

Canned goods

Recent studies about the levels of BPA in canned goods might have you concerned, but what's a little BPA when the world is ending? You can never have too many canned goods in the event of an emergency.

Tuna: Packed with protein, this canned fish is low in fat, too! Tuna is also a great source of omega-3 fatty acids.Canned vegetables: Granted, frozen veggies are much better if you're watching your salt intake, but you're likely to lose power as the world ends and nobody likes spoiled, previously-frozen food. Canned is the way to go.Canned fruit: We know fresh fruit is preferable, but when the grocery stores are pillaged and there's not an apple to be found, you'll be glad to have these canned alternatives at the ready. Other non-perishables

Canned isn't the only way to go. There are plenty of other food items you can stock up on that won't go bad. Who wants to live off of nothing but tuna as the world ends? Not us.

Nuts: Almonds, cashews, walnuts, pecans and more -- nuts are packed with fiber, protein and healthy fat.Cereal: You may not be able to have your Cheerios with a side of milk, but dry cereal is better than no cereal. And under the circumstances, we won't judge you for indulging in your favorite dessert-style breakfast food. Who's counting the grams of sugar at a time like this? Crackers: Bread grows mold after a week or two, but a few packages of crackers can last a long time. Plus, you'll need something to go with that tuna!Booze and/or wine

Be honest. If the world's about to end, a nice cocktail or glass of wine might make it a little more bearable. If you don't drink, you can skip the alcoholic beverages. However, if you do indulge sometimes, what better time than the end of the world? If you're particularly morbid, you can toast the occasion with a glass of Champagne. Don't forget the mixers! Tonic is vodka's best friend and a bottle of the unopened fizzy stuff will last for a long time.

Essentials

Don't forget the water! We're not listing it last because it's not important. You can live, um, forever without booze, but only three days without water. Also, make sure to have a can opener. As much fun as it might seem to open cans of tuna with your teeth, we're guessing there aren't very many dentists working as the world ends.

Yields 6 bites per banana

Ingredients:3 whole bananasLollipop sticksChocolate chipsToppings (graham cracker crumbs, coconut, sprinkles, etc.)Directions:
    Cut ends off banana, then cut them into two-inch pieces. Stick a lollipop stick into the middle of the banana slice and set aside on wax paper-lined cookie sheet. Put in freezer and freeze for at least an hour till frozen.Melt chocolate over double broiler or, carefully, in the microwave.Remove bananas from the freezer, dip in melted chocolate and sprinkle with topping of your choice. Set back on wax paper-lined baking sheet.Once all bites have been covered in chocolate and decorated, return to freezer and keep frozen until ready to eat.

Frosty place setting ideas for summer parties

Nothing says cool and frosty like rich glass cobalt blue dishes accented with clear glass or white dishes. Place a larger cobalt plate or charger down first and a smaller clear plate on top of that with a cobalt cloth napkin folded in the center of the plate. Place your table settings on a snow-white tablecloth and arrange your best silverware. Cobalt blue stemware for wine or drinks alongside clear glasses for water or soda will be the perfect combination. Ingredients:8 strawberries12 blackberries1 teaspoon sugar28 fresh mint leaves2 limes, juiced8 ounces light rumGinger aleCrushed iceDirections:
    Assemble four cocktail glasses. Place strawberries, blackberries and sugar into a small food processor and puree until a jam-like consistency forms.Place 6 mint leaves into the bottom of each glass. Divide the berry mixture and fresh lime juice between the four glasses. Muddle the berry mixture, mint and lime juice in each glass so that the mint gets broken up and mint flavor is released into the berries.Fill each glass three-quarters full with crushed ice. Pour 2 ounces of rum into each glass over top of the ice. Top cocktails off with Ginger ale. Give drinks a stir and garnish with remaining mint leaves. Serve.
