Frozen banana bites recipe

Yields 6 bites per banana

Ingredients:3 whole bananasLollipop sticksChocolate chipsToppings (graham cracker crumbs, coconut, sprinkles, etc.)Directions:
    Cut ends off banana, then cut them into two-inch pieces. Stick a lollipop stick into the middle of the banana slice and set aside on wax paper-lined cookie sheet. Put in freezer and freeze for at least an hour till frozen.Melt chocolate over double broiler or, carefully, in the microwave.Remove bananas from the freezer, dip in melted chocolate and sprinkle with topping of your choice. Set back on wax paper-lined baking sheet.Once all bites have been covered in chocolate and decorated, return to freezer and keep frozen until ready to eat.

Sparkling berry mojito recipe

Yields 4 cocktails

Ingredients:8 strawberries12 blackberries1 teaspoon sugar28 fresh mint leaves2 limes, juiced8 ounces light rumGinger aleCrushed iceDirections:
    Assemble four cocktail glasses. Place strawberries, blackberries and sugar into a small food processor and puree until a jam-like consistency forms.Place 6 mint leaves into the bottom of each glass. Divide the berry mixture and fresh lime juice between the four glasses. Muddle the berry mixture, mint and lime juice in each glass so that the mint gets broken up and mint flavor is released into the berries.Fill each glass three-quarters full with crushed ice. Pour 2 ounces of rum into each glass over top of the ice. Top cocktails off with Ginger ale. Give drinks a stir and garnish with remaining mint leaves. Serve.

Ham rolls, or pinwheels as most people call them, are a steadfast tradition for many families. They are a quintessential dish at family reunions, holiday gatherings and other special occasions. And they are made even more special if kids are involved in the pinwheel making.

Pinwheels are simple to make and have hundreds of variations! If you haven't made them before, just grab a piece of ham and start rolling. Once you get the technique down, have fun teaching your kids how to do the same.

Basic Ham and Onion PinwheelsIngredients:Rectangle shaped deli-sliced hamSoftened cream cheese-room temperatureGreen onions with long stalksDirections:
    Spread the softened cream cheese on one side of a ham slice.Place one of the onions vertically at one end of the ham slice. Roll the ham slice and the onion together lengthwise.Chill the rolls in the refrigerator until the cream cheese becomes firm again.Before serving, slice the rolls crosswise into 1-inch pieces. Place on a platter with extra green onions for garnish.
Ranch Ham and Tortilla Pinwheels

Makes three dozen rolls

Ingredients:2 (8-ounce) packages cream cheese, softened1 (.4-ounce) package Hidden Valley Ranch Salad Dressing Mix2 green onions, minced4 (12-inch) flour tortillas1 (4-ounce) can diced green chiles or 2 fresh jalapenos, minced1 (2.25-ounce) can sliced black olives (optional)Directions:
    Mix cream cheese, dressing mix and green onions. Spread on tortillas.Drain chiles and olives thoroughly. Sprinkle equal amounts of either or both on top of cream cheese.Roll tortillas tightly. Chill at least 2 hours or overnight.Cut rolls crosswise into 1-inch pieces.
Oriental Smoked-Turkey PinwheelsIngredients:4 (10-inch) flour tortillas1/2 cup hoisin sauce, plum sauce or other oriental style sauce1/3 cup finely chopped green onions2 cups thinly sliced smoked turkey (about 8 ounces)4 large leaves leaf lettuce to cover tortillas

Directions:

    Spread each tortilla with the sauce and sprinkle with green onions.Arrange turkey in single layer on each tortilla, leaving a 1-inch border around the edges. Cover the turkey with a lettuce leaf. Roll up tightly like a jelly-roll and wrap tightly in plastic wrap.Refrigerate for at least 1 hour or for up to 6 hours. Cut each crosswise on the diagonal into 12 slices.
Boursin Pinwheels

Makes about 24 pinwheels

Ingredients:3 (8-inch) tortillas1 (5.2-ounce) carton Boursin cheese (garlic/herb cheese)12 large fresh basil leaves1/2 of a 7-ounce jar roasted sweet red peppers4 ounces shaved deli roast beef, ham, or turkey1 tablespoon mayonnaise (light or regular)Directions:
    Spread each tortilla with one-third of the cheese. Add a layer of the large fresh basil leaves to cover.Cut the peppers into 1/4-inch wide strips and divide among the tortillas. Arrange over the basil leaves 1 to 2 inches apart.Top with meat slices. Spread 1 teaspoon mayonnaise over the meat on each tortilla. Roll up the tortillas tightly, jelly-roll style. Wrap in plastic wrap.Chill in the refrigerator 2 to 4 hours to blend flavors. To serve, remove the plastic wrap and cut each of the rolls into 1-inch slices (make diagonal slices, if desired).
Mexican-Style PinwheelsIngredients:8 ounces sour cream1 (8-ounce) container cream cheese, softened1 (4-ounce) can diced green- chilies, well drained1 cup grated Cheddar cheese1/2 cup chopped green onionGarlic powder and seasoned salt to taste5 (10-inch) flour tortillasDirections:
    Mix all of the filling ingredients together. Divide the filling and spread evenly over the tortillas.Roll up tortillas tightly and cover with plastic wrap, twisting ends.Refrigerate for several hours. Unwrap and cut in slices about 1-inch thick.
Spicy Ham PinwheelsIngredients:8 ounces cream cheese, softened1 teaspoon onion, grated1 teaspoon prepared horseradish1 dash Worcestershire sauce15 thin ham, slicesDirections:
    Blend cream cheese, onion, horseradish and Worcestershire sauce until they are a spreading consistency. Spread each ham slice with cheese mixture.Chill. Just before serving, cut crosswise into 1-inch slices. This is also great with roast beef from the deli.
Pineapple Ham PinwheelsIngredients:1 package of flat bread or large tortillas1 container cream cheese with pineapple1 pound shaved ham1 can roasted red peppers

Directions:

    Spread a thin layer of cream cheese on bread. Place a layer of ham over them.Pat dry peppers on paper towel. Place them on the ham, scattered, don't cover the entire piece of ham.Roll up bread and wrap in plastic wrap overnight.Just before serving, cut crosswise into 1-inch slices.
Mustard Ham Pinwheels

This makes about 80 pinwheels

Ingredients:4 cups cooked ham2/3 cup mayonnaise2 teaspoons Dijon Mustard or hearty mustard1/2 cup finely shredded Cheddar cheese2 loaves unsliced sandwich bread1/2 cup (1 stick) of butterDirections:
    Trim the crust off of the loaf of unsliced sandwich bread. Cut into 5 to 7 half-inch horizontal slices. Set aside.Grind cooked ham in food processor or food grinder. Combine ham, cheese, mayonnaise and mustard. Mix well.Butter each horizontal slice of bread and spread filling onto each slice. Roll up tightly each horizontal slice like a jelly-roll.Wrap each roll in plastic wrap and refrigerate overnight. Remove wrap the next day and cut each roll into eight to 12 crosswise slices.

Serves 6-8

Ingredients:1 pound pappardelle, tagliatelle, fettuccine or linguini1 (16-ounce) package frozen peas, thawed3/4 cup ricotta cheese1-1/4 teaspoons coarse salt1/4 teaspoon black pepper1 tablespoon chopped fresh chives1 tablespoon extra-virgin olive oilDirections:
    Cook the pasta according to package directions.Meanwhile, pulse the thawed peas in a food processor or blender until chopped (take care not to puree). Add one-half cup ricotta, salt and pepper to the peas and pulse to mix everything together.Drain the pasta and reserve one-half cup of the cooking water. Put the pasta back in the pot.Add the peas to the cooking water, add to the pot with pasta and toss together.Arrange the pasta in a large bowl or platter, top with the remaining ricotta and sprinkle with the chives.Drizzle the olive oil over top. Serve in individual bowls, making sure to distribute the ricotta cheese topping with some in each bowl.

Not everyone is familiar with buckeyes, but if you're from the state of Ohio (or anywhere nearby), you think of two things: The Ohio State University and its sports teams (nicknamed the Buckeyes), and if it's the holiday season, the candy that resembles a buckeye nut (from the state tree, the buckeye).

 

Go crazy for this candy

The nut from the buckeye tree is small, round and shiny brown, with a bit of a tan color that is exposed. Leave it to folks to come up with a sweet, traditional treat that combines the great tastes of chocolate and peanut butter and resembles a buckeye nut!

This candy treat is delicious and is a holiday tradition, at least in some parts of the country. Perfect to serve at New Year's parties, you should give making the Buckeye candies a try, no matter where you live!

Ingredients:1 (18 ounce) jar creamy peanut butter1/2 cup butter, softened1 pound gluten-free confectioners' sugar (check the label)1 (12 ounce) bag of milk chocolate chipsWaxed or parchment paperToothpicks for dippingDirections:
    Mix the peanut butter, butter and confectioners' sugar together until you reach a smooth mixture.Form the mixture into 1-1/2-inch balls and place them on baking sheets lined with waxed or parchment paper.Meanwhile, melt the chocolate until it's smooth. Using the toothpicks, dip each ball into the melted chocolate, leaving a portion exposed (about the size of a coin).Use your finger to lightly smooth out the small hole in the candy left behind from the toothpick.You can refrigerate the candy on the baking sheets until they've firmed up. Store in an airtight container.
